Gelrite gellan gum is a low-acyl (deacetylated), microbial-derived polysaccharide that forms firm, brittle, highly transparent gels and is widely used as a gelling agent in plant tissue culture and microbiological media. It replaces agar in many applications due to its superior performance at lower concentrations and broader pH tolerance. This non-toxic, neutral-tasting gum forms gels at concentrations as low as 0.04% without syneresis, even under refrigeration or freezing. It is soluble in hot water and resists degradation, making it ideal for sterile environments.
