Pullulan is a naturally occurring polysaccharide produced by the fungus Aureobasidium pullulans, used as a film-forming agent, stabilizer, and encapsulating agent in pharmaceuticals, food, and cosmetics. Available in powder form, it is soluble in water and exhibits excellent film-forming and barrier properties. CAS: 9057-02-7. Stored at 2 to 8 °C.
