Benzoin is a white crystalline solid used as a fragrance ingredient, stabilizer in polymer chemistry, and in pharmaceutical formulations. It is also employed in perfumery and as a starting material for the synthesis of benzil. It also serves as a flavour ingredient, a photopolymerization catalyst, and an intermediate in organic synthesis, including routes to alpha-benzoin oxime, an analytical reagent for metals. Available in powder or crystal form, it has a CAS number of 119-53-9, a molecular formula of C6H5COCH(OH)C6H5, and a molecular weight of 212.24 g/mol.
